A little like a chicken chili, but less hearty, this soup will be sure to warm you up!
Ingredients
5 cups chicken stock
14.5 oz canned tomatoes
1 medium onion diced
4 garlic cloves, minced
1 lb boneless skinless chicken breast or thighs
1-2 tsp chili powder
2 tsp cumin
1 tsp paprika
1 tsp coriander
1 tsp salt or to taste
1/2 tsp pepper
14.5 oz black beans
2 c frozen corn
Directions
Add onions, garlic, tomatoes, and stock to pot. Top with chicken and spices. Top with corn and beans.
Cook on high pressure for 10 minutes. Quick release.
Shred chicken and return to pot. Adjust seasoning as necessary.
Serve with shredded cheese or other taco toppings.
